carob mint pie
1 cup honey/ or sugar 11/2 c. flour 8c.milk 8 eggs (can be 3) slighty beaten, 6 tbl. butter, 3tbl. carob/or cocoa, 1 1/2 tsp. peppermint extract.
1 baked pie shell: Stie together honey/ sugar and flour in saucepan. Blend milk and egg yolks gradually stir in honey mixture,cook over med. heat stirring constantly. When hot add carob/coca and peppermint. Stir until mixture thickens and boils, boil and stir 1 min. remove from heat. Pour into pie shell cool at least 2 hrs. or enjoy as pudding. A family favorite around our house.
